Cheddar Crusted Chicken Nuggets

There are few things that I love more than experimenting with new recipes in the kitchen.  Sometimes the recipes work out, sometimes they don’t.  Thankfully, it worked it out this time around.  I kept this recipe super simple using only three ingredients – chicken breasts, cheddar flavored Cheese Duck Crackers from Brandless and an egg.


When the weather gets hot, I tend to lean more towards preparing recipes that don’t take long to prep or cook.  Also, I was making this meal as a late night snack.  So I definitely didn’t want something that would take forever to prepare because late night snacks are supposed to be effortless for the most part.

Because I am a late night snacker, I’ve been trying to make better choices about what I snack on.  This is exactly why I used the Cheese Duck Crackers to bread to my chicken nuggets.  They’re organic, non-GMO and don’t have any of those not so good for you artificial flavors and preservatives.  Also, they provided just the right amount of crunch I needed.

I simply cut my chicken breast into pieces, seasoned it, and then crunched up some of the crackers using my hand.  I used my hand because I didn’t want to crunch up the crackers too fine.  I wanted nice chunky bits of cracker.  Then, I dipped my chicken in the egg before coating them the crunched up crackers and put them on a baking sheet.

Once all of my chicken pieces were breaded, I popped them in the oven until they were done.  You can flip these halfway through if you want to prevent sogginess on the bottom, but I didn’t have any issues with the bottoms of mine being soggy.
